TORTA con AMARETTO

Italians love their almonds!  This Torta di Amaretto has been a tradition for many birthdays and special occasions and found in just about every authentic Italian bakery in the New England area.  It consists of 4 layers of soft, springy, sponge cake doused with Amaretto liqueur and filled with 3 layers of Italian pastry cream (not whipped cream).  Topped with a light, not-too-sweet, vanilla-almond whipped-cream frosting and adorned with toasted almonds, it is a fancy way to celebrate your special occasion!
