PASTIERA NAPOLETANA

This traditional Italian pie originated in Naples where it is prepared every Easter and is famous throughout Italy.  A delicious, citrus-infused, flakey crust exterior encasing a matrix of  "farro" (whole-kernel grain) blended with whole milk ricotta that is fragranced with lemon and orange zest and a touch of cinnamon.  Each bite into the crusty shell yields to the moist, cheesecake-like texture within.  Pastiera is a rustic, yet classic, dessert loved by many southern Italians.  Perfect for any occasion, it is a delight rarely found outside of Italy that is sure to please.
