Cookie Decorating $85
Ever wonder why those fancy icing cookies cost so much? Some are truly works of art that take time to create. The possibilities are endless, and it just takes a little know-how and lots of practice to create the multitude of beautiful designs and textures possible. This class focuses on the importance of Royal icing consistency and the many techiniques on how to pipe onto your cookie to create a variety of beautiful designs. The intention is that when you leave class, you will be able to look at any cookie design and know how to reproduce it, yourself. All materials will be provided. Basic to intermediate level.
Polenta & Mushroom Ragout $110
& Crispy Mediterranean Salad
A smooth and creamy polenta infused with flavor and Swiss Gruyere cheese encased in a browned, crusty exterior. Then topped with the umami delivered by a medley of wild mushrooms sautéed with nine fanciful ingredients combined into a rich, flavorful ragout. Fresh, handmade pasta that beats anything purchased off the shelf! Doesn't take a lot of time to make, and it cooks up at a fraction of the time. This recipe is made in part with 100% durum wheat semolina flour so that your fettuccine will have a taste and texture that shout homemade. You will finish it with your choice of a light and tasty tomato-basil sauce or with the authentic "Alfredo" sauce that is eaten in Italy.
Chicken Marsala $130

Braised chicken breast immersed in a sauce made with the aromatic flavors coming from pancetta and fine Marsala wine that is further enhanced by the umami delivered by Shiitake mushrooms that, altogether, create a savory dish that is rich and full of flavor.
Risotto $110
Fennel & Orange Salad
Risotto, the other staple beside pasta that is famous throughout northern Italy. This dish can be made with a variety of additional ingredients; however, getting the correct texture and consistency of the rice takes some know-how. In this class you will be using none other than Arborio rice as you learn how to combine and work the necessary ingredients in order to establish a "basic risotto". In doing so you will choose to make either Risotto Milanese or Risotto w/ Shiitake & Gorgonzola.
Holi Ravioli $130
& Caprese Salad
Ravioli - the traditional Italian pillows that can be made with an array of tasty fillings. Using your host's premade homemade dough comprised of eggs, flour, and semolina, you will learn how to roll out your dough to the correct thickness and then encase it with a mushroom filling that you make in class. Then cook and enjoy those tender pillows in a complementary butter and cheese sauce that yields to the subtle flavors within, but you can serve them any way you like.
